Beef and Broccoli Stir Fry

You know when you see those “15-minute recipes” and you’re like YES I am SO hungry but I can wait 15 minutes and then it takes an HOUR to actually make the meal, by which point you’re not even hungry anymore because you snacked on stale tortilla chips you scrounged from the cupboard because you were STARVING and WHY DO THEY ALWAYS LIE WHEN THEY SAY 15 MINUTES?!

Am I being melodramatic? Fine. A little. But seriously. How annoying is that? Well, I think you understand how annoying I find it. So I promise when I say this recipe really is only 15 minutes (minus the marinade time), you can trust me. Marinate the meat the night before, and I swear on all that is holy, when you get back from work the next day, you can get dinner on the table in 15 minutes. Or 10. Seriously. 10. I wouldn’t even lie to you. Also, it’s delicious. Beat that.

Ingredients:

For the marinade:

  • 1/2 tsp. baking soda
  • 1 tsp. sugaar
  • 1 tbsp. cornstarch
  • 1 tbsp. low-sodium soy sauce
  • 1 tbsp. water
  • 2 tbsp. vegetable oil
  • 1 1/2 lbs. flank steak, sliced into thin strips (or the pre-sliced “stir fry beef” from the grocery store)

For the rest of it (see note below regarding sauce):

  • 3/4 c. low-sodium soy — MUST be low-sodium or it will be way too salty
  • 3 tbs. brown sugar
  • 5 garlic cloves, minced
  • 3 tbsp. flour
  • 4 1/2 tbsp. vegetable oil
  • 2 heads broccoli, crowns only

Instructions:

To marinate the meat, whisk together all marinade ingredients, then toss the steak in with it to coat. Cover and refrigerate at least one hour, or overnight.

In a small bowl, stir together soy sauce, brown sugar, garlic, and flour until smooth. Set aside.

In a large wok or saute pan, heat 2 tbsp. veggie oil over high heat until shimmering. Add broccoli and saute 3 minutes, stirring often. Transfer broccoli to a plate.

Reduce heat to medium high. Carefully add remaining tbsp. of oil, then add marinated meat and half of the sauce mixture. Saute for 3-4 minutes, stirring often, until meat is cooked through. Stir in broccoli and remaining sauce. Saute 1 minute more, then serve hot over rice.

*I didn’t think the original recipe made enough sauce to cover the entire pan of meat and broccoli, so I added another half-batch of the sauce. Those changes are reflected above. If you’re not as saucy as I am (hehehe), then feel free to start with the original amount called for (for example, you would only use 1/2 cup soy sauce instead of 3/4 cup) and stir in more as needed.

  1. Gluten free! I made this tonight just using gluten free soy sauce and corn starch as substitutes. It turned out excellent. I did make the mistake of not reading the recipe before starting dinner so my meat only marinated a few minutes. Still turned out perfect. tfs

  2. Love this recipe, although, I always add a bit more broccoli and use sirloin. Then I add a 1/2 cup of reduced sodium beef broth to the sauce to make it extra saucy for the extra broccoli. The broth really adds to the flavour and keeps it from becoming way too salty, also think the sauce becomes way too thick and blobby without the broth, even without extra broccoli.

  6. I found this recipe on Pinterest, pinned it, and just made it tonight for my parents and myself. I had to use thinly sliced top round, because I couldn’t find flank steak, but otherwise followed your recipe exactly, and it is AMAZING!! Way better than any restaurant version that I have had (and beef and broccoli is one of my favorite things to order from Chinese, so I’ve had quite a few)! My parents LOVED it too (my mom couldn’t stop going “Mmmm!”) and I doubt I’ll ever get it again, I’ll just make this. The sauce/meat/broccoli ratio is perfect. I made rice paper spring rolls to go with this and I served it over quinoa.
    One suggestion: for the sauce ingredients, where it says brown sugar, it says “tbs” and I’m not sure, but I think it is supposed to be “tsp” (that’s what I did, anyway, “3 tsp”). Just thinking people might confuse it for “Tbsp”.

  11. I made this last night and only got to try it because my step son ate three helpings!!!! It was great! I only had regular soy sauce, but no one said it was too salty:) The boy even shouted out, in between gulps, that it was really good, and it was. I marinated the flanksteak overnight and threw it together after work. Easy and delish!

  13. Followed Your recipe exactly and my sauce came out almost tar like when I put it in the wok with my meat. Not very appealing. Not sure if it’s because I used less meat but it just didn’t look good at all. I’m super bummed (it’s probably something I did and not you, I’m not known as the best cook ever 🙂 )

  14. OMG, I don’t know if it was my cooking or if I was just plain hungry, but this had the BEST TASTE ever. 10 x better than the freezed dried bag version in the frozen food section. You have to try, it was very simple and I agree, must have plenty of sauce. Good luck

  15. I made this stir-fry today and all the kiddos scarfed it down; I added mushrooms and sugar snap peas and didnt hear one complaint about the veggies which is a miracle. So good!

  16. I just made this last night and I wanted to say that it is AMAZING!! So easy and it taste just like Chinese takeout. I accidently put 3 tablespoons (instead of teaspoons) of brown sugar in this and it still came out great! Definitely adding this one to the weekly dinner rotation. Thanks for posting
